Here’s a hearty and delicious recipe for traditional Irish Shepherd’s Pie by our office manager, Kat! Perfect for warming you up on a cold day
Servings: 4-6
Ingredients
For the Filling:
2 tbsp olive oil
1 large onion, finely chopped
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
500g (1 lb) ground lamb (or beef if preferred)
2 tbsp tomato paste
2 tsp plain flour
1 tbsp Worcestershire sauce
1 cup beef stock
1 cup frozen peas
Salt and pepper to taste
For the Mashed Potato Topping:
1 kg (2 lbs) potatoes, peeled and quartered
2 tbsp butter
½ cup milk
Salt to taste
Instructions
1. Prepare the Filling:
Heat olive oil in a large skillet or pan over medium heat. Add the onion, carrots, and celery. Sauté until softened (5-7 minutes).
Add garlic and cook for 1 minute.
Add ground lamb, breaking it apart with a spoon. Cook until browned.
Stir in tomato paste, flour, and Worcestershire sauce. Cook for 2 minutes.
Pour in beef stock, reduce heat, and let simmer for 20 minutes. Add peas in the last 5 minutes. Season with salt and pepper.
2. Prepare the Mashed Potatoes:
Boil potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.
Mash with butter and milk until smooth. Adjust salt to taste.
3. Assemble the Shepherd’s Pie:
Preheat oven to 200°C (400°F).
Spoon the meat filling into a baking dish. Spread mashed potatoes evenly on top, smoothing with a spoon or fork.
Bake for 20-25 minutes or until the top is golden and the edges are bubbling.
4. Serve:
Let it cool for 5 minutes before serving. Pair with a side of greens for a true Irish feast!
